Tomato concasse-200g

Onion, diced-50g

Red pepper, diced-50g

Cucumber, seeded diced-50g

Garlic, finely chopped-6g

Red wine vinegar-10ml

Lemon juice-10ml

Olive oil-10ml

Salt-to taste

Tabasco sauce-to taste

Tomato-200ml

Water or clarified as needed stock

FOR GARNISH:

Balanced tomato diced-50g

Red & green pepper diced-50g

Cucumber diced-50g

Croutons, small

(Fried in butter & olive-50g)

Puree all ingredients except tomato juice & garnish, adjuct consistency & flour & water/ consommé.

Add the garnish. Chilli thoroughly

Adjust seasoning with salt & pepper.
