No-Bake Flag Cake

Makes: 10 servings

225g cream cheese

115g plain yoghurt

115g ricotta cheese (or lightly salted hung curd)

½ cup sugar

1tsp vanilla essence

Zest of 1 lemon

Slices fruit of your choice in green and orange (such as kiwi and peaches or apricots)

Syrup or honey to glaze (optional)

  1. Combine first 6 ingredients in food processor. Spread evenly in 12-inch spring form cake tin (with a de-teachable bottom).
  2. Decorate with fruit slice laid over in concentric circles. hell for at least 3 hours, overnight. Let surface of cheesecake show thought to suggest white areas.
  3. Remove side of tin just before serving and glaze fruit if likes.
