Makes: 4 servings
4 medium green mangos (peeled and cut into strips)
3tbsp mustard oil
2 red chilies
1tsp mustard seeds
Salt to taste
Heat mustard oil. Drop in two whole red chilies.
After a few seconds, add mustard seeds. As soon as stop spluttering, add the mango. Fry lightly.
Add sugar and salt to taste. Continue cooking and stirring till the sugar turns brownish.
Add 3 cups water. Simmer 8 minutes. Check seasonings and take off the main course.
