Baked Fish With Spinach

Prep: 15 minutes

Cook: 1 hour

Makes: 8 servings

1 cup cooking oil

1 ½ cup chopped onions

1 ½ cup fresh tomatoes (chopped)

2 cloves garlic, minced

½ cup parsley

½ cup chopped fresh dill (sowa)

1 tsp pepper

½ tsp salt

2tbsp lemon juice

½ kg fresh spinach, chopped &blanched (fresh spinach will ooze out too much water)

1 kg fish, whole (cleaned, washed)

½ cup white wine

1. Saute onions in oil until soft.

2. Add garlic, tomatoes, parsley, dill, salt & pepper. Simmer for 10 minutes.

3. Sprinkle fish lightly with salt and lemon juice. Arrange tomato mixture in a baking dish. Lay fish on top and arrange spinach around it.

4. Pour wine over it all. Cover with aluminum foil and bake in preheated 350°C oven for 30 minutes.

5. Uncover and continue baking for 15 minutes longer.

6. Serve hot.

Does India Need communal parties?

I think, it was Tan's post on this blog itself, Republic Day Event, where this question was raised. My answer. YES. we need communal parties even in Independent, Secular India. Now let me take you, back to events before 1947. When India was a colony of the British Empire. The congress party, in its attempt to gain momentum for the independence movement, heavily used Hinduism, an example of which is the famous Ganesh Utsav held in Mumbai every year. Who complains? No one. But at that time, due to various policies of the congress, Muslims started feeling alienated. Jinnah, in these times, got stubborn over the need of Pakistan and he did find a lot of supporters. Congress, up till late 1940's never got bothered by it. And why should we? Who complains? No one. But there were repercussions. The way people were butchered and slaughtered during that brief time when India got partitioned, was even worse than a civil war scenario. All in the name of religion.
