Rhian Rodrigues’ Roast Turkey Salad with Cranberry Chilly Dressing Ingredients: Roast turkey, shredded 200g Roast potato, chunks 60g Roast carrot sticks 60g Iceberg lettuce 100g Green onion sticks 40g Chives sticks for garnish 40g For the dressing: Cranberry sauce 30g Red wine vinegar 30ml Chilly infused oil ml Chilly flakes, a pinch Method: Toss the turkey and the winter vegetables together and refrigerate. Dilute the cranberry sauce with red wine, vinegar and oil. Place the cold veggie and meat mixture on the base of a bowl. Add the lettuce on top and pour dressing. Garnish with chilly flakes and chives.

Mango ambal

Mango ambal Prep: 10 minutes Cook: 10-12 minutes Makes: 4 sedrvings § 4 medium green mangos (peeled and cut into strips) § 3tbsp mustard oil § 2 red chillies § 1tsp mustard seeds § 4tbsp sugar § Salt to taste 1. Heat mustard oil. Drop in two whole red chillies. 2. After a few seconds, add mustard seeds. As soon as stop spluttering, add the mango. Fry lightly. 3. Add sugar and salt to taste. Continue cooking and stirring till the sugar turns brownish. 4. Add 3 cups water. Simmer 8 minutes. Check seasonings and take off the main course.

Prep: 20 minutes, plus overnight soaking time for the beans Cook: about 1 ½ hours Makes: about 8 ¼ cups or first-course servings § 450g dry white beans (cannelloni, haricot or similar); 2tbsp olive oil; § 1 medium onion, chopped; 1 medium carrot, peeled and chopped; § 1 medium celery stalk, chopped; § 2garlic cloves, finely chopped § 4 cups chicken or vegetable stock; § 170g chunk ham (or chicken ham), cut into ½ -inch pieces (about 1 cup); § 1 chicken stock cube (if using chicken ham); 1tsp jeera (cumin) powder; 1tsp paprika; salt to taste; § ¼ tsp ground black pepper; 2 medium tomatoes, coarsely chopped; § 1 cup loosely packed parsley leaves, chopped; § 2tbsp fresh lemon juice 1. Rinse beans under cold running water; pick out and discard stones and shrivelled beans. Place in a bowl with enough water to cover by about 2 inches. Cover and let beans stand at room temperature overnight. Drain and rinse. 2. In 4-littre saucepan, heat oil over medium heat. Add onion and coo

Total time 25 minutes (using the pressure cooker) Make 6-8 servings 1tbsp desi ghee or vegetable oil ½ tsp mustard seeds 1 chill, chopped Pinch of hing 1 cup chopped brinjal 1 cup diced potatoes ½ cup basmati rice, washed and kept aside for 20 minutes 2 cups warm water 2tsp garam masala powder ½ tsp haldi Salt to taste 1. Heat ghee. Add mustard seeds and when they splutter, mix in chilli and hing. Stir in brinjal and potatoes; sauté for 5 minutes. Add green peas, rice, water, garam masala and haldi. Pressure cooker till whistle is about to blow, then lower heat and cook 5 minutes. Set aside till steam dissipates. 2. Fluff with fork to separate grains. Serve alone, or with chutney

Total time 30 minutes Makes 6 servings ½ cup oil 2 large onions, chopped fine 1 large tomato, chopped fine ¼ tsp haldi 1tsp chilli powder ½ cup shelled and boiled green peas ½ cup cubed sweet potatoes ½ cup cubed potatoes ½ cup cubed suran or kand(purple yam; or use zimikand) ½ cup cubed carrots 6 whole small baby (or cherry) tomatoes (optional) 2tsp sugar ½ cup vinegar 3 green chillies, chopped fine (optional) Salt to taste 1. Heat 2 tbsp oil. Fry onions till light brown, about 3 minutes. Add chopped tomato and cook for another 3 minutes. Stir in haldi and chilli powder; keep aside. 2. In remaining oil, sauté cubed vegetable separatery for about 10 minutes, or until tender. Mix vegetables, green peas and whole tomatoes with fried onion mixture. Cover pan and cook for another 2-3 minutes. 3. Add sugar, vinegar, green chillies (if using) and salt. Simmer for 5 minutes and serve hot at once, with rice, pulao or aapams.

Whole wheat pancakes with honey

Prep 20 minutes Cook 15 minutes Makes 16-24 pancakes (depending on the size of the non-stick pan) 225g whole wheat flour 2 eggs 600ml skimmed milk 50g melted butter Vegetable oil to grease the pan 1. Put the flour a bowl. 2. With a wooden spoon mix the eggs followed by milk into the flour. 3. Add melterd butter and mix well. 4. Preheat a non-sticky pan (eight inchs). 5. Lightly oil the pan and pour in some of the mixture making sure to swirl the batter evenly to get a thin round pancake. 6. Cook for half a minute or until golden brown. 7. Toss the pancakes and cook again for less than half a minute. 8. Fold into half and then into a quarter and keep aside covered till all the mixture is finished. 9. Arrange 3-4 pancakes in the centre of the plate and liberally pour honey and serve.

French style courgette

Prep 15 minutes Cook 20 minutes Makes 4 servings 500g bottle gourd, peeled and diced 1 ½ tbsp garlic, chopped 250g fresh tomato puree ½ tsp salt ½ tsp sugar 1tsp freshly ground black pepper; 30ml olive oil 1. Put olive oil in a non-sticky pan over medium heat 2. Add garlic and sauté till it is light brown 3. Add the diced bottle gourd along with some salt; reduce flame and cook covered on slow flame, pouring in a little water if required. 4. Once it is ¾ th done add the fresh tomato puree along with the pepper, salt and sugar. 5. Simmer till the bottle gourd is fully done. 6. Check seasoning and serve.
